Welcome to Simple Menu Monday, where every week I share real life menu planning with you.
If you’ve been hanging around for very long, then you know that I am a HUGE advocate for meal planning. Not only does menu planning cut stress from your weekly routine, but it also helps you save more by utilizing items you already have in your freezer and pantry.
The purpose for Simple Menu Monday is two-fold. First, I hope it helps you with your own menu planning so you can save time and money and alleviate stress. My second reason is truly an ulterior motive – I’m hoping it helps hold me accountable to planning my own menus.
Simple Menu Monday – Week of February 15
Yep, it’s Tuesday. AGAIN! Tuesday night to be exact. I completed my meal plan for this week on paper, on Sunday (#winning), but it didn’t quite make it to the blog.
I started my new job this week, or I guess I should say jobs as in plural. I’m a virtual assistant for a few other bloggers now, helping them on their websites with some of the things I’ve learned to do on mine. So my normal routine has been turned upside down. And needless to say, Simple Saving Savvy is feeling the brunt of the time crunch.
However, things are starting to smooth out and I’m hoping in the coming weeks to develop a balanced schedule between family, working and blogging.
And of course, now more than ever, I need to meal plan. Let’s just say my slow cooker has been working double time! I’m trying lots of new recipes. Some are keepers, others need tweaked. You know how it goes.
Here’s what’s on the menu for this week….
Monday – Beef Enchilada Casserole
on hand: ground beef, butter, milk, monterey jack cheese, red enchilada sauce, corn tortillas
Tuesday – Slow Cooker Cowboy Cookout
This recipe is from the book 365 Slow Cooker Suppers, which I highly recommend. I can’t the recipe online. It’s basically a hobo pack filled with the ingredients listed below and cooked in the slow cooker. Trying this for the first time. We’ll see how it goes.
on hand: ground beef, baked beans, onions, red bell pepper, bbq sauce
Wednesday: Slow Cooker Beef Stew
This is a basic recipe that I’ve been making for years. I need to actually write it down some day.
on hand: beef roast, potatoes, carrots, celery, green beans, corn
Thursday – Mongollian Beef with Rice
on hand: mongolian beef mixture in the freezer, bell peppers to add, rice
Friday – Taco Salad
on hand: ground beef, taco seasoning, black beans, shredded cheese, salsa, sour cream, tortilla chips
to buy: avocado
Saturday – Baked Cod with Roasted Veggies
on hand: cod fillets, cauliflower, mushrooms, cherry tomatoes
to buy: sugar snap peas, orange bell peppers, broccoli crowns
Sunday – Grilled Baby Back Ribs With Baked Potatoes
